Abstract

Milk and dairy products are relatively recent additions to adult human diets on the evolutionary time scale. This ‘recent’ addition to our diet began about 10,000 years ago and has had profound impacts on our culture, genetics and behaviour. Catherine Walker describes the fundamental changes originating in the Neolithic that are still observable today.
