Abstract

A critical" summary is given of the literature on velocity of crystallisation of sucrose and of other substances from solution, and the necessity for a more precise experimental method pointed out. The development of a new method for studying the velocity of crystallisation of sucrose is described, which enables the experimental conditions of supersaturation of solution and rate of flow of solution relative to the crystal to be more accurately defined than hitherto. Methods are given for the measurement of the rate· of growth of fourteen individual faces of the sucrose crystal in a normal direction. The results obtained with the new methods are divided into two sections, dealing with the' effect on crystallisation velocity of: 1) The rate of flow of solution relative to the crystal. 2) The supersaturation and temperature of the solution. The bearing of these results on the problem of elucidation of the mechanism of the crystallisation process is discussed. A new method for the determination of the" solubility of sucrose at various temperatures is also described, and solubility figures given which indicate that the previously accepted solubility table for sucrose in pure solution is appreciably in error.
