Abstract

THE GROWTH DURING HINDERED SETTLING OF A CASEIN PRECIPITATEPREPARED BY SALTING-OUT AT HIGH CONCENTRATIONS OF AMMONIUM SULFATE MAY BE MODELED USING THE THEORY OF DIFFUSION-CONTROLLED AGGREGATION. GROWTH OF THE PRECIPITATE UNDER SHEAR IS NOT PREDICTABLE BY THE THEORY OF SHEAR-CONTROLLED OWING TO COMPLICATIONS ARISING FROM SIMULTANEOUS BREAK-UP. INCORPORATIONOF PRECIPITATE SHEAR BREAK-UP DATA, DERIVED FROM A STEADY-STATE PARTICLE SIZE DISTRIBUTION, IN THE GROWTH MODEL WAS NOTPOSSIBLE OWING TO THE TIME-DEPENDENT PROPERTIES OF THE PRECIPITATE.
